He began playing the piano at the age of five and was soon performing in local churches and clubs. At the age of 18, Hunter moved to Detroit, Michigan, where he joined the house band at the Flame Show Bar. He quickly became a sought-after session musician, playing on records by artists such as Little Willie John, Jackie Wilson, and Hank Ballard. In the early 1960s, Hunter joined Motown Records as a staff musician. He played on many of the label's biggest hits, including "My Girl" by The Temptations, "I Heard It Through the Grapevine" by Marvin Gaye, and "Ain't No Mountain High Enough" by Diana Ross. Hunter left Motown in the late 1960s and continued to work as a session musician. He has played on records by artists such as Aretha Franklin, The Four Tops, and The Supremes. In addition to his work as a session musician, Hunter has released several solo albums. His most recent album, "Joe Hunter: The Motown Years," was released in 2018.
